Sweet potato cakes with smoked salmon are the perfect choice for an elegant brunch, a quick dinner or as a refined appetizer for special occasions. The combination of sweet potatoes and smoked salmon will surprise you not only with its simplicity, but also with its sophisticated taste.

Sweet potatoes have been in my kitchen for a long time, but let’s face it, they are not a common ingredient in Czech cuisine. So what are sweet potatoes? Sweet potatoes are a versatile vegetable that is incredibly filling thanks to their sweetness and texture. When it comes to preparing them, you can bake them in the oven, heat them in the microwave or boil them in water.

Properly cooked sweet potatoes are tender, creamy and incredibly good. And while many people may think so, sweet potatoes don’t just have to be a part of baby food. On the contrary, they are a great versatile ingredient with which you can make lots of great sweet and savoury dishes.

How to cook sweet potatoes?

Sweet potatoes, also known as sweet potatoes, are a popular ingredient in kitchens around the world due to their sweet taste and versatile uses. Whether you’re preparing them as a side dish, a main dish or as part of soups and salads, sweet potatoes can be cooked in a variety of ways.

Before you start cooking them, it is important to choose good quality sweet potatoes. Look for firm, smooth potatoes with no visible signs of damage. Before cooking, wash the sweet potatoes thoroughly and remove any damaged parts. For sweet potato patties, I recommend not peeling the sweet potatoes and leaving the skin on nicely.

So many options!

  • Cooking whole sweet potatoes: Place the sweet potatoes in a large pot and add enough water to submerge them completely. Bring the water to a boil and cook the sweet potatoes until they are soft, which takes approximately 30 minutes depending on size.
  • Cooking the chopped sweet potatoes: cut the sweet potatoes into equal sized pieces. Place them in a pot of water, bring to a boil and cook for 10-15 minutes. Sweet potatoes are generally cooked a little faster than regular potatoes.
  • Preparing sweet potatoes in the microwave: Preparing sweet potatoes in the microwave is a quick and efficient method when you are short on time. First, wash the sweet potatoes thoroughly and prick them with a fork in several places, allowing steam to escape during cooking. Then place them in a suitable container. Cook the sweet potatoes in the microwave on high power for approximately 5-10 minutes, depending on their size and the power of your microwave. Turn the sweet potatoes once during cooking to heat them evenly. Once cooked, let the sweet potatoes rest for a few minutes before slicing them.

600 grams sweet potatoes
1 tablespoon olive oil
100 grams panko breadcrumbs
2 tablespoons all purpose flour
3 shallots - chopped
1/2 teaspoon salt
1/4 teaspoon ground black pepper
To Finish
4 poached eggs
200 grams smoked salmon
fresh dill

Directions

Bake the Sweet Potatoes
Preheat the oven to 210°C. Pierce the sweet potatoes on all sides with a fork and cut in half. Spread the sweet potatoes on a baking sheet and drizzle them with about 1 tablespoon of olive oil, so that the sweet potatoes are oiled on all sides.
Place the sweet potatoes cut side down on a baking sheet and bake in a preheated oven for about 30-35 minutes. Take the baked sweet potatoes out of the oven and let them cool down a bit. Meanwhile, finely chop your shallots.

Make the Patties
Scoop out the flesh from the sweet potatoes with a spoon and transfer to a larger bowl. Add the breadcrumbs, flour, chopped shallots, salt and pepper to the sweet potatoes and mix thoroughly.
Shape the mixture into patties. Fry the patties in a frying pan until golden brown on both sides. It takes about 3-4 minutes on each side. Serve the sweet potato patties ideally with slices of smoked salmon, poached egg, fresh salad and dill
