Creamy Dijon Chicken Recipe

This Creamy Dijon Chicken recipe is extremely fast, full of flavors and budget friendly. I like to serve it with brown rice, noodles or fried gnocchi which makes it perfect weeknight dinner! As a bonus, the chicken cutlets and the sauce are all cooked in the same skillet, making clean-up a breeze.

This dish is a true weeknight meal! It is ready in less than 30 minutes from start to finish. The key is the use of thin chicken breasts, which cook just a few minutes on the stove and save you a lot of time. And the sauce? A few ingredients that come together in a few minutes and the creamy sauce is ready. Believe me, it couldn’t possibly be easier. There is just one more thing to say – It is important to use quality dijon mustard and good wine.

4 chicken breasts
1 teaspoon salt
1 teaspoon paprika
1 teaspoon dried oregano
1/2 teaspoon chilli flakes
1 tablespoon olive oil
2 shallots
4 garlic cloves - minced
100 ml white wine
1 tablespoon dijon mustard
150 ml chicken stock
200 ml heavy cream
1 tablespoon butter
salt and pepper to taste
chopped parsley to finish

Directions

Prep the Chicken
First, season the chicken breasts on both sides with salt, oregano, paprika and chilli flakes. In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the seasoned chicken breasts until golden brown on both sides. Remove and set aside.
In the same skillet, sauté the finely chopped shallots until translucent. Add minced garlic and cook for a minute. Pour in white wine and cook until the wine is fully evaporated.

Make the Sauce
Add dijon mustard, chicken stock and let it cook for few minutes until all ingredients are well combined. Now, lower the heat and pour in the heavy cream and finish with tablespoon of butter. Mix well.
Gently nestle the seared chicken breasts back into the skillet and let it all simmer for few minutes until the sauce has thickened. Finish with sprinkle of chopped fresh parsley and serve with cooked brown rice or roasted potato gnocchi. Enjoy!
