This Easy Oven Baked Tacos Recipe is the perfect easy weeknight dinner. The recipe has lots of flavor, which makes it super delicious and none of the stress. They take less than 30 minutes to make and are the perfect taco recipe for any party or gathering!

1 red onion
1 red bell pepper
200 ml salsa verde
4 garlic cloves
1 teaspoon smoked paprika
1 teaspoon paprika

salt and pepper to taste
160 grams refried beans *warmed

Directions

Meat Filling
Preheat your oven to 190°C. In a large skillet, heat the neutral oil over medium heat. Add the finely chopped red onion and diced bell pepper, sautéing until translucent. Introduce the ground beef to the skillet. As it browns, mix in the minced garlic, smoked paprika, regular paprika, ground cumin, onion powder, and chili flakes. Season with salt and pepper to your liking. Once the beef is fully cooked and aromatic, stir in the salsa verde, letting the flavors meld for a few minutes. Remove from heat and set aside.

Assemble the Tacos
Take each corn tortilla and spread a generous layer of refried beans at its base. Heap on the meat filling, ensuring a rich, even distribution. Sprinkle a lavish amount of shredded cheese over the meat.
Arrange the filled tacos on a baking tray, standing them up side by side. Bake in the preheated oven for approximately 10 minutes, or until the tortillas turn a golden hue and the cheese is bubbling and slightly browned. Once out of the oven, sprinkle the baked tacos with freshly chopped cilantro for that extra touch of freshness. Serve immediately and enjoy!

Notes
If your corn tortillas are a bit stiff or prone to tearing, warm them slightly before assembling. A few seconds in the microwave or a quick pass over an open flame can make them more pliable.
Ensure that you break the beef into small crumbles as you cook. Larger chunks might make the tacos harder to eat after baking.
Different cheeses melt at different rates. Keep an eye on your tacos during the last few minutes of baking to prevent over-browning.
Store-bought salsa can vary in flavor and heat. Taste yours first and adjust the seasoning of your meat mixture accordingly.
Store leftover baked tacos in an airtight container in the refrigerator for up to 3 days.For best results, reheat tacos in the oven at 175°C until warmed through. This will help maintain the crispy texture.
If you wish to freeze the tacos, it's best to do so before baking. Assemble the tacos (without baking), place them on a tray to freeze individually, and then transfer to a freezer bag. When ready to eat, bake directly from frozen, adding a few extra minutes to the cooking time.
