Harissa & Tomato Gnocchi

5 Minutes + 15 Minutes Cooking



This recipe for Harissa & Tomato Gnocchi is an easy and quick vegan dinner that will find its place among your favorite week-night meals. And it’s the harissa that gives this dish a delicious twist.



Adjust Servings
500 grams gnocchi
1 tablespoon olive oil
1 medium onion
3 garlic cloves
350 grams canned tomatoes
1 tablespoon harissa paste *depends on the strength of the harissa you use.
1 tablespoon cream cheese
1 teaspoon dried oregano
1 teaspoon dried parsley
120 grams mozarella

Start with the sauce
Start by finely dicing the onion then frying on a low heat in a large pan with the olive oil. Once the onion is fried golden brown, add the finely chopped garlic and fry for 1 minute. Add the tomatoes and allow to simmer gently.
In the meantime, bring the water to a boil in a pot, salt thoroughly and cook the gnocchi according to the instructions. When the gnocchi is cooked, drain and set aside some of the water in which the gnocchi were cooked.

Bake it!
Preheat your oven to 200°C. Then add the oregano, parsley, salt, pepper and some of the water you set aside from the gnocchi to the pan with the tomatoes. Add the harissa and simmer gently to combine the flavours. Now squish the tomatoes with a fork / wooden spoon, add cream cheese and the cooked gnocchi. Stir thoroughly.
Now transfer the mixture to a baking dish, spread the mozzarella on top and place in a preheated oven for 5 minutes just to melt the cheese on top. Enjoy!
