2.
When you're ready to cook, preheat your oven to 200°C. Prepare your vegetables during this time. Dice the potatoes and red bell pepper, and halve your cherry tomatoes. Organize these veggies in a large baking dish. Place the marinated chicken thighs skin side up on top of the prepared vegetables. Drizzle any leftover marinade over the top, pour over the chicken stock and tuck in the sprigs of rosemary.
Bake everything in the preheated oven for approximately 50 minutes to 1 hour. The chicken should be cooked thoroughly and its skin should turn crispy and golden brown, and the vegetables should become tender. Let the dish cool for a few minutes before serving. Enjoy!

Notes
The longer you marinate the chicken, the more flavor it will absorb. If you have time, try marinating the chicken overnight for maximum flavor infusion.
Leaving the skin on the chicken thighs during baking helps to lock in moisture and keep the chicken succulent. It also becomes wonderfully crispy in the oven!
Cut your potatoes and bell pepper into similar-sized pieces to ensure they cook evenly.
If you prefer, you can use chicken breasts, drumsticks, or a mix. Just remember to adjust the cooking time accordingly, as breast meat can cook faster and dry out.
Store any leftovers in an airtight container in the refrigerator for up to 4 days.
