This tasty recipe is an easy interpretation of pizza-style chicken. And as a bonus, It’s ready in about 30 minutes, perfect for weeknight dinners. And if you are a mealprep person, this recipe is also for you. This one holds up in the refrigerator for up to 3 day and still perfect!

4 chicken breasts
1 tablespoon olive oil
1 1/2 teaspoon italian seasoning
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
salt and pepper to taste
1 marinara jar
75 grams shredded mozzarella cheese
75 grams pepperoni
45 grams pitted olives
125 grams cherry tomatoes
fresh basil to garnish

Directions

Season the Chicken
Preheat your oven to 200°C. In a small bowl, combine the Italian seasoning, garlic powder, cayenne pepper, salt, and pepper. Mix well. Lay the chicken breasts on a baking tray and brush each side with olive oil. Evenly sprinkle the seasoning mix over the chicken breasts, ensuring they're well-coated on both sides.
Place the chicken in the preheated oven and bake for 15 minutes.

Add Pizza Toppings
Remove the chicken from the oven after 15 minutes. Pour the marinara sauce evenly over each chicken breast. Sprinkle the shredded mozzarella cheese on top and arrange the pepperoni slices, pitted olives, and cherry tomatoes over the chicken.
Return the tray to the oven and continue baking for another 15 minutes, or until the cheese is melted and bubbly, and the chicken is fully cooked through. Garnish with freshly torn basil leaves before serving. Enjoy!

Notes
If your chicken breasts are particularly thick, you might want to butterfly them or pound them slightly for even cooking.
To ensure your chicken is cooked through, you can use a meat thermometer. The internal temperature should reach 75°C .
A shallow baking dish is preferred for this recipe. It ensures even cooking and prevents the toppings from getting soggy.
If you don't have mozzarella, any good melting cheese like cheddar, Monterey Jack, or provolone will work.
Feel free to get creative with your veggies! Mushrooms, bell peppers, or thinly sliced onions can be great additions.
Store the leftovers in an airtight container in the refrigerator. They should be good for up to 3 days.
