Quick Chicken Stroganoff

10 minutes + 20 minutes cooking



If you love beef stroganoff, then you’ll love this quick chicken stroganoff. It tastes almost identical, only it’s made with chicken. It’s a great, quick and tasty dinner that you can have on the table in as little as 30 minutes!

Adjust Servings
2 tablespoons olive oil
500 grams chicken - diced
2 onions
4 garlic cloves
400 ml chicken stock
300 grams mushrooms *sliced
1 tablespoon paprika
4 teaspoons dijon mustard
2 tablespoons Worcestershire sauce
200 grams sour cream
salt and pepper to taste
chopped parsley to finish

Cooking the Chicken
Start by heating a large skillet or pan over medium-high heat and add the olive oil. Add the diced chicken to the pan, season generously with salt and pepper, and sear until golden brown and cooked through. This should take around 5-7 minutes. Once the chicken is cooked, transfer it to a plate and set aside.

Adding Liquids
In the same pan, add a bit more olive oil if needed, and toss in the finely chopped onions. Sauté until they are translucent and soft. Stir in the minced garlic cloves and paprika, allowing the garlic to become aromatic and the paprika to release its flavors, about 1-2 minutes.
Add the sliced mushrooms to the pan, ensuring they are spread out evenly. Let the mushrooms cook until they are golden and have released their moisture. Pour in the chicken stock, Dijon mustard, and Worcestershire sauce. Mix everything together well, ensuring the mushrooms are well-coated and the pan’s contents are combined.

Final Seasoning
Add the cooked chicken back into the pan. Let the mixture simmer for a few minutes, allowing the chicken to soak up the flavors. Reduce the heat to low and stir in the sour cream until the mixture is smooth and well incorporated.
Taste and adjust the salt and pepper as necessary. Just before serving, sprinkle with freshly chopped parsley for a burst of color and freshness. Serve alongside some fluffy rice or buttered noodles.
