Soak the Potatoes!
Preheat the air fryer to 180°C. Wash and peel the potatoes. Use a mandoline or a sharp knife to thinly slice them into rounds. In a large bowl, cover the potato slices with cold water and let them soak for 20-30 minutes.
Drain the potatoes and pat them dry with a clean kitchen towel. In a bowl, toss the potato slices with a few sprays of cooking spray until they are coated evenly. Add salt and pepper (and any other seasonings you like) and toss again.

Make them Crispy!
Place the potato slices in a single layer in the air fryer basket. Be sure not to overcrowd the basket - you may need to cook the potato slices in batches. Cook the potato slices in the air fryer for 10-15 minutes, flipping them over halfway through the cooking time. Check them frequently to make sure they don't burn.
Once the potato chips are golden brown and crispy, remove them from the air fryer and place them on a paper towel to cool and absorb any excess oil. Serve the potato chips immediately as a snack or side dish.
