Preheat the air fryer to 180°C. Wash and peel the potatoes. Use a mandoline or a sharp knife to thinly slice them into rounds. In a large bowl, cover the potato slices with cold water and let them soak for 20-30 minutes.
Drain the potatoes and pat them dry with a clean kitchen towel.
In a bowl, toss the potato slices with a few sprays of cooking spray until they are coated evenly. Add salt and pepper (and any other seasonings you like) and toss again.
