4 medium apples
190 grams wholemeal flour
120 grams unsalted butter
100 grams sweetener
60 ml cold water
50 grams cream cheese
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon lemon zest

Directions

Make the crust
In a large mixing bowl whisk together dry ingredients (flour, sugar and salt). Once the dry ingredients are combined, add the butter. The butter should be cold and cut into cubes. Using a pastry blender, blend the butter until there are just small pea size clumps of butter throughout. Sprinkle the ice water over the flour mixture and process until the pastry just begins to come together, about 10 seconds; you should still be able to see small pieces of butter in it. Place the dough on a floured work surface and knead the dough. (Try to work quickly and do not knead the dough unnecessarily long.) Wrap the dough in plastic or wax paper and refrigerate for about 30 to 60 minutes.

Bake the galette
Bake the galette for about 40 minutes until the pastry is nicely browned and crisp and all of the apple slices are softened and bubbling. Then transfer the pan to a rack and let the galette cool. Serve warm or at room temperature with scoop of vanilla ice cream, if desired.

Notes
Apples - Galettes need baking apples. Baking apples have a firm texture that stands up well to heat, i.e. Granny Smith, Fuji, Honey Gold or Gala.
Serving - I highly recommend serving the galette with some vanilla ice cream or whipped cream alongside.
Prevent soggy galette - Brushing the interior crust of the galette with egg white before adding the filling is a tried and true method for preventing a soggy bottom
