500 grams gnocchi | |

Directions

Burst the tomatoes
First, heat the olive oil in a pan over medium heat and add the cherry tomatoes and sliced garlic. Let it cook until the tomatoes are bursting and jammy, it takes about 8 minutes.

Make it Creamy!
Once the tomatoes are jammy, mash them lightly with a food processor and then add the heavy cream and vegetable stock. Stir to combine the cream with the tomatoes and create a creamy sauce. Then add the gnocchi and cook for about 5-7 minutes on the medium heat until the gnocchi are fully cooked. Stir to coat all the gnocchi in the sauce.
Finally, top with burrata or any other cheese you like and cover to melt the cheese perfectly. It takes only few minutes. Garnish with fresh basil and serve!
