Directions

1.
So Easy!
To make these crunchy protein snack bites, start by crushing the rice waffles into small pieces. Then, in a mixing bowl, add the chia seeds, protein powder, and a pinch of salt, stirring everything together until well combined. Next, in a separate small bowl, heat up the nut butter and honey in the microwave until it becomes a smooth, creamy consistency. Pour the mixture into the mixing bowl and stir everything together until it is evenly coated.
Using your hands, roll the mixture into small bite-sized balls and place them on a baking sheet lined with parchment paper. Freeze the balls for about 20 minutes to set.

2.
Let it Rest
While the balls are freezing, melt the chocolate in a small saucepan over low heat, stirring constantly until it is smooth and creamy. Once the balls are set, remove them from the freezer and use a fork to dip them into the melted chocolate, making sure they are fully coated.
Place the chocolate-coated balls back onto the baking sheet and let them cool in the refrigerator for about 10-15 minutes until the chocolate has hardened. Once the chocolate has set, enjoy your delicious Crunchy Protein Snack Bites!

Notes
Make sure to use natural nut butter without added sugar or oil.
Allow the mixture to chill in the fridge for at least 30 minutes to make it easier to handle and shape into balls.
If the mixture is too dry, add a little more honey or nut butter to bind the ingredients together.
