Herb Butter Sweet Potatoes

Sweet potatoes coated in herb butter are the perfect side dish that is not only suitable for summer barbecues, but also works great with roast chicken or fish. What’s more, it’s easy to prepare and doesn’t take too much time at all.

2 large sweet potatoes
1 teaspoon olive oil
4 tablespoons fresh parsley
50 grams melted butter
2 cloves of garlic
zest of 1 lime
salt

Directions

Cut the sweet potatoes into roughly 0.5cm slices and place in a large bowl. Add 1 tablespoon of olive oil, a pinch of salt and toss to coat all the potatoes with oil. Spread the potatoes out on a baking tray lined with parchment paper so that they lie next to each other. Bake in a preheated oven at 190°C for 20 minutes, then turn the potatoes over and bake for a further 20 minutes.

Prepare the Herb Butter
While the potatoes are baking, prepare the herb butter. In a medium bowl, mix the butter with the herbs and set aside. Then pour the herb butter over the roasted potatoes and serve!
