200 grams cous cous | |

For the Dressing
3 tablespoons lemon juice | |
5 tablespoons olive oil | |
1 1/2 teaspoons dijon mustard | |
1 tablespoon honey | |

Directions

Start with Couscous
Place your couscous, two tablespoons of olive oil, and a pinch of salt in a small pot and mix with a fork to coat each grain nicely. Pour in hot broth or water, cover with a lid and let it swell.
Meanwhile, prepare all the remaining ingredients (except feta) in a salad bowl. Cut the tomatoes in half, dice the cucumber, finely chop the red onion and slice the olives. After about 10 minutes the couscous should be ready. Gently fluff it with a fork and add to the chopped vegetables. Mix well.

Prepare the Dressing
Put all the ingredients for the dressing in a small bowl and whisk together well to combine. Season with salt and pepper.
Pour the dressing over the salad, toss and top with crumbled feta. Enjoy!
