Preparation
In a large bowl, first mix the eggs, erythritol and milk. Whisk until the ingredients are combined. Then grind the oats into a flour and add to the batter along with the baking powder and salt. Finally, stir in the matcha powder.

Make it MINI!
Heat a frying pan over medium heat and brush it lightly with oil. Press rounds about 1 cm in diameter into the pan and let them fry for about 1 minute (by the time you are done with the first batch, the first pancakes will be ready to flip, so it is important to work quickly).
Flip the mini pancakes with a spatula and let them fry for another minute.
Then transfer the pancakes to a plate and repeat until you've worked through all the batter. Serve with milk, yogurt or however you like.
