2.
Bake the fries
Toss dry potatoes with oil and seasonings and spread evenly in a single layer on a parchment-lined pan. Take advantage of the double temperature when cooking. First, bake the fries on a lower setting for about 25-30 minutes so they cook beautifully on the inside, then raise the temperature and bake for another 20 minutes. Enjoy!

Notes
Crispiness - Oil and high heat are the keys to making crispy baked french fries. That combination locks in the moisture and gives you fries that have a crispy exterior and a creamy interior.
Potatoes - Russet potatoes are the gold standard for French fries in general. They especially suitable for these baked fries, because the skins are thicker and dryer.
Soak potatoes in cold water - after you cut the potatoes, soak them in cold water for at least 30 minutes. This will bring you one step closer to beautifully crispy fries.
Dry the potatoes - before you put the fries in the oven, dry them perfectly so they don’t steam and get soft when they bake.
