Directions

Boil the potaotes
First, peel the potatoes and cut them into larger pieces. Place the potatoes in a large pot with COLD water and 1 teaspoon of salt and slowly bring to a boil. Then boil for about 30 minutes or until they are fork tender.
While the potatoes are cooking, add the heavy cream, garlic cloves and thyme to a smaller pot and bring to gentle simmer, allowing the garlic and thyme to just lightly infuse the heavy cream. Then lightly salt, remove the garlic cloves and thyme from the pot and add the butter. Stir and set aside.

Drain the cooked potatoes and mashed them in your potato ricer or masher until desired consistency. Season with a little salt, add the heavy cream and butter mixture and mix well until smooth. Serve with additional butter and topped with parmesan cheese.
