Peanut Butter & Banana Bars
I make these Peanut Butter & Banana Bars very often, especially when I have overripe bananas at home that need to be used up. Thanks to the sweetness of the bananas, there’s no need to add any extra sugar and if you’d like to make a vegan version, just swap the egg for a flax egg!

3 ripe bananas | |
140 grams creamy peanut butter *or any nut butter of choice | |
100 grams oats | |
50 grams almond flour | |
1 egg *can be replaced by flax egg | |
30 grams vanilla protein powder | |
1 teaspoon cinnamon | |
1 teaspoon baking powder | |
pinch of salt |
To Finish
50 grams chocolate chips | |
30 grams chopped walnuts *or any nuts of choice |

Directions

Mash the bananas
First, mash the bananas thoroughly. This is best done on a flat, hard surface, so I recommend a cutting board. Really try it, it's much easier than trying to mash the bananas directly in the bowl.
Then transfer the bananas to a large bowl, add the eggs and stir.
Add first the peanut butter to the bowl, then the oats, almond flour, protein powder, cinnamon, baking powder and a pinch of salt.

Let's BAKE!
Using a spatula, mix all the ingredients well. Finally, stir in the chocolate chips.
Pour the mixture into a baking tin lined with parchment paper and sprinkle the chopped nuts on top.
Bake in a preheated oven at 180°C for about 30 minutes.

Notes
Vegan version - You can easily replace the egg with a flax egg. Simply mix one tablespoon of flax meal and three tablespoons of water and let stand for about 5 minutes.
