Pomegranate & Fennel Winter Salad

Mixed baby greens
25 grams walnuts
1 whole apple
1 small fennel
1/2 pomegranate
For the dressing
2 tablespoons olive oil
1 teaspoon dijon mustard
1 tablespoon lemon juice
1 tsp honey
salt, dill

Finely chop the apple and fennel. Then chop the walnuts and mix together with the pomegranate and lettuce in a large bowl. Make a dressing of olive oil, mustard, honey, lemon juice, salt and dill and serve!
