Quick BBQ Chicken Sandwich

This easy and quick BBQ Chicken Sandwich is just a BBQ experience without the grill. Yet packed with all the flavours of a summer cookout. Whether it’s a weekend treat or a mid-week pick-me-up, these BBQ chicken sandwiches promise a burst of joy in every bite.

Furthermore, these sandwiches are practically my ideal vision. Positioned on a lightly toasted brioche bun, they feature a rich smokey-sweet shredded chicken. Additionally, a sharp, crunchy coleslaw adds the perfect touch. Best of all, their preparation is both effortless and swift.

150 ml BBQ sauce
2 tablespoons ketchup
200 ml chicken stock
1/2 teaspoon chilli flakes
salt and pepper to taste

Pan-Fried Perfection
Begin by generously seasoning your chicken breasts with salt and pepper. In a skillet over medium heat, sear the chicken breasts. Let them sizzle until each side is golden brown.
Once seared, pour over the rich BBQ sauce, followed by the chicken stock. To this, add the ketchup and the chili flakes for that hint of warmth. Reduce the heat to low and let the chicken bask in this flavorful pool. Cook for about 25 minutes, ensuring you flip the breasts halfway through. This ensures even absorption of the sauce.

Shred and Mix
Post cooking, transfer the chicken to a bowl and shred it using two forks. Once shredded, pour the sauce from the pan over the chicken, mixing well to ensure each strand is coated in the sauce.
Now it's time to assemble the sandwiches. Start by toasting your burger buns for that crispy edge. On one half, lay a slice of cheddar cheese. Pop it into the oven just until the cheese is beautifully melted. Then layer sliced tomatoes and lettuce. Then the BBQ shredded chicken and top this with a dollop of coleslaw, adding a creamy contrast. Close up your sandwich with the other half of the bun. Press down slightly and enjoy!

Shredding tip: Let the chicken cool for a few minutes after cooking, as this makes the shredding process easier and prevents any accidental burns.
Bun Choices - While any burger bun will work, consider brioche buns for a richer taste or ciabatta rolls for a rustic touch.
Allow any leftover shredded BBQ chicken to cool down to room temperature before considering storage. Place the cooled chicken in an airtight container and refrigerate. It should remain fresh for up to 3 days.
For longer storage, freeze the chicken mixture in a sealed container or freezer bag for up to 1 month. Thaw overnight in the fridge before reheating.
