Quick and easy air fried rice paper dumplings! These vegan gluten-free dumplings are crispy on the outside and stuffed with a simple but tasty tofu vegetable filling.

250 grams firm tofu | |
1 medium zucchini | |
2 large carrots | |

Start with the Filling
First, prepare the filling. Roughly grate the tofu, carrots and zucchini. Finely chop the green onions. Heat the sesame oil in a large pan and lightly fry the tofu and vegetables. Pour the soy sauce over the mixture and season with salt and pepper.

Make the Dumplings
Soak the rice papers in warm water for 5 seconds or until soft. Always place 1 to 2 tablespoons of the prepared filling in the centre of the rice paper and wrap. Then dip another rice paper and wrap the dumpling in it again so that it does not tear or fall apart when frying. Repeat this with the other dumplings.
Place the dumplings in an air fryer and bake at 180°C for about 8 minutes until crispy. Serve with the prepared dipping sauce. Enjoy!
