Start with the Crumble
Preheat your oven to 175°C. Line a 20x20cm square baking pan with parchment paper, making sure to leave an overhang on the sides. This will make it easy to lift the bars out of the pan once they're done baking. In a large mixing bowl, combine the oat flour, rolled oats, brown sugar, cinnamon, baking soda, and salt. Stir everything together until well combined. The oat flour and rolled oats will form the base of the crumble, while the brown sugar, cinnamon, and vanilla extract will give it a sweet and fragrant flavor.
Add the melted butter and vanilla extract to the dry ingredients and mix until a crumbly dough forms. You can use a fork or your hands to combine the ingredients. Make sure the butter is fully incorporated into the mixture, as this will help the crumble stick together. Set aside 1 cup of the crumb mixture for the topping and press the remaining mixture firmly into the prepared pan, making sure it's evenly distributed.
