Strawberry Crumble Bars

zest of 1 lemon

Start with the Crumble
Preheat your oven to 175°C. Line a 20x20cm square baking pan with parchment paper, making sure to leave an overhang on the sides. This will make it easy to lift the bars out of the pan once they're done baking. In a large mixing bowl, combine the oat flour, rolled oats, brown sugar, cinnamon, baking soda, and salt. Stir everything together until well combined. The oat flour and rolled oats will form the base of the crumble, while the brown sugar, cinnamon, and vanilla extract will give it a sweet and fragrant flavor.
Add the melted butter and vanilla extract to the dry ingredients and mix until a crumbly dough forms. You can use a fork or your hands to combine the ingredients. Make sure the butter is fully incorporated into the mixture, as this will help the crumble stick together. Set aside 1 cup of the crumb mixture for the topping and press the remaining mixture firmly into the prepared pan, making sure it's evenly distributed. Use your fingers or the back of a spoon to press the mixture down, creating a firm and even layer.

Make the Filling
Rinse the strawberries and remove the stems. Cut them into small pieces and place them in a mixing bowl. Add the cornstarch, honey, and lemon zest, and toss everything together until the strawberries are coated. The cornstarch will help thicken the filling and hold everything together.
Pour the strawberry mixture over the crumb base in the baking pan, spreading it out evenly. Use a spoon or spatula to smooth out the filling, making sure it reaches all the edges of the pan. Sprinkle the reserved crumb mixture over the top of the strawberries, covering the filling completely. This will create a crunchy and buttery topping that complements the sweetness of the strawberries.

Store the bars in an airtight container in the refrigerator for up to 5 days. You can also freeze the bars for up to 3 months. Thaw them in the refrigerator before serving.
