Sweet Potato & Ground Chicken Chilli
Make a double batch of this quick Sweet Potato & Ground Chicken Chilli and eat it for lunch the next day or freeze the extras for another night! I assure you that once you try it, you will want to cook it at home again and again.

1 medium onion - chopped | |
500 grams lean ground turkey | |
1 large sweet potato - diced | |
250 grams red kidney beans | |
200 grams crushed tomatoes | |
2 garlic cloves - minced | |
1 tablespoon neutral oil *I usually use avocado oil | |
1 teaspoon smoked paprika | |
1 teaspoon sweet paprika | |
1/4 teaspoon ground cumin | |
chilli powder *its amount depends on how spicy you want your food | |
400 ml vegetable broth |

Start with the onion
First, fry the finely chopped onion in oil. Slowly sauté the onions until golden and give it time. This creates a great base for the whole chili.
Once the onions are done, add the ground turkey, season lightly with salt and let the meat saute for 3-4 minutes.

Give it some time
Once the meat is lightly browned, add all the spices. Cook again for about 2-3 minutes to allow the meat to soak up the flavour. Then you can add the beans, sweet potatoes and crushed tomatoes. Just gently stir and pour in the vegetable broth.

Serve!
Now let the chili cook under a lid for at least 30 minutes on low heat so that it bubbles gently.Stir the chili a few more times during this time and then you can serve.
I like to serve this chili in a deep bowl with some rice, sliced avocado and tortilla chips.

Notes
Serving - Chili can be served either alone or with tortilla chips or rice. (Rice is my personal favorite)
Ground turkey - Choose really lean meats so you don't have unnecessarily fatty and heavy chili.
Let it rest - It's hard to say, but this chili tastes best the next day when the flavors develop beautifully.
Vegetarians - If you want to cook the chili in a vegetarian version, simply replace the turkey meat with tofu or red lentils.
