Creamy Spinach Tortellini

Some days, you just need a big bowl of comfort food in the form of pasta. This Creamy Spinach Tortellini recipe is made in less than 30 minutes and is perfect for a weeknight dinner!

500 grams tortellini *use filling of choice, I use ricotta tortellini for this recipe
1 medium onion finely chopped
2 cloves of garlic
3 tablespoons tomato paste
a handful of spinach
200 ml cream
olive oil
salt & fresh basil

Make it easy!
In a large sauce pan, bring water to boil, add salt and cook tortellini al dente. Set aside and do not forget to put aside a cup of pasta water. Then prepare a pan, put olive oil on it and fry the chopped onion and garlic until golden brown. Add the tomato paste and mix. Pour in the pasta water, cream and boil gently. Finally, add the spinach. Cook for about 5 minutes to combine the flavours. Add the cooked tortellini and mix them well with the sauce. Serve with fresh basil and sprinkle with parmesan cheese.
