Filling is important!
Filling is the most important part of these pies. You have to really work hard to achieve a balanced sweet taste, because the filling is the basis of this whole recipe.
Heat the butter in a pan and add the chopped apples, sugar, cinnamon, vanilla extract and lemon juice. Mix and let simmer for a while to soften the apples. It takes about 10 minutes. Meanwhile, mix the cornstarch with a little water and once the apples are soft, add the mixture to them. Mix together to thicken the filling and then take off the heat and transfer to a bowl.

Prepare the puff pastry
While your filling is cooling, spread the puff pastry on a baking sheet lined with baking paper and divide it into 10 identical rectangles. Brush the edges of each rectangle with egg wash and spread the apple filling on half of each. Fold each pie over and press the edges with a fork.
Brush each pie then top with egg and sprinkle with cinnamon sugar. Transfer to an oven preheated to 200°C and bake for about 20 minutes until golden brown. Serve WARM!
