Directions

1.
Start with the Bacon
Heat up your pan, a large one ideally, over medium heat. Once hot, add a tablespoon of olive oil, and let the oil spread out evenly. Next toss in your diced bacon, letting each piece sizzle and crisp up. Add diced onions and sliced mushrooms to the pan and season with salt and pepper. As the onions turn translucent and the mushrooms brown, it's time to add the crushed garlic.
Next pour in the heavy cream and chicken stock and bring to boil. Add your uncooked spaghetti to the pan, ensuring it's fully submerged in the liquid. Let it all simmer away for about 10-12 minutes. You'll want to stir occasionally to make sure the pasta doesn’t stick together or to the bottom of the pan.

Finish with Cheese
As your pasta cooks and the sauce thickens, stir in your shredded Parmesan cheese, watching as it melts into the sauce, enhancing the creamy texture and adding a delectable savory note. Finally, add a handful of chopped parsley, lending a fresh touch to your pasta dish and Enjoy!

Notes
The recipe uses spaghetti, but you can use any type of pasta you like. Long pasta like linguine or fettuccine would work just as well as shorter types like penne or rigatoni.
Using freshly grated Parmesan cheese will provide the best flavor and melting quality.
Make sure your bacon is cooked until crisp. It not only brings texture to the dish but also adds a great smoky flavor.
You can use any variety of mushrooms you like. Portobello mushrooms would give a meatier texture, while shiitake mushrooms could give an earthy flavor.
If you want to make this recipe dairy free, replace the heavy cream with a plant-based cream or a non-dairy milk thickened with a little flour. You can find vegan versions of Parmesan cheese in most grocery stores now.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
