Preparation
Begin by prepping your vegetables. Slice the onion and green peppers into thin strips. Core the tomatoes and chop them into small pieces, making sure to retain their juices as much as possible. Set aside. Heat the olive oil in a large frying pan over medium heat. Once the oil is shimmering, add the sliced onion and green peppers.
Sauté them until they soften and the onions turn translucent, which should take around 3-5 minutes. Add the chopped tomatoes and their juices to the pan. Cook until the tomatoes break down and the mixture thickens, forming a richly flavored base. This should take about 10 minutes. Stir occasionally to prevent sticking.

Stir in the salt, paprika, ground black pepper, and chili flakes. Sauté for another minute to let the spices release their aromas. Now, crack the eggs directly into the tomato mixture. Use a spatula to gently stir and scramble the eggs into the mixture. Allow them to cook until they're set to your liking, which should take around 3-5 minutes. Remember to stir gently during this process to distribute the heat evenly and to blend the eggs with the veggie mixture for a cohesive dish.
Finally, serve your Turkish Menemen hot, garnished with additional chilli flakes if you like an extra kick. Pair it with fresh, warm pita bread for a complete, comforting meal.

Notes
Use ripe tomatoes and fresh green peppers to get the best flavor for your Menemen. The tomatoes should be juicy, as their juices will be simmered to create the base of this dish.
Be cautious not to overcook the eggs, or the Menemen could turn out dry. It's ideal to have the eggs slightly runny as they will continue to cook with the residual heat even after you take the pan off the heat.
Menemen is traditionally served hot, straight out of the pan with a side of warm, fresh pita bread. But, it also goes well with a chunk of crusty bread to soak up the delicious tomato juices.
The spice level can be adjusted according to your preference. If you prefer a milder dish, reduce the chili flakes or omit them altogether.
Leftover Menemen can be stored in the refrigerator for up to 2 days. Be sure to store it in an airtight container to retain freshness.
