Creamy Butter Beans with Spinach

These creamy butter beans with spinach aka my comfort food meets with early spring vibes! Although satisfyingly creamy, this dish is balanced and full of flavor and important nutrients.



Adjust Servings
200 grams canned butter beans
1 white onion
1 tablespoon olive oil
1 small zucchini
1 tablespoon nutritional yeast
1 teaspoon tahini paste
1 teaspoon all-purpose flour
handful of spinach
salt & pepper to taste
To Finish
1 tablespoon harrisa paste
20 grams parmesan cheese

Make it Creamy!
Chop the onion finely and cut the zucchini into rounds. Then heat the olive oil in a pan, add the onion and lightly fry until golden brown. Add the diced zucchini, beans and mix. Season lightly with salt and pepper.
Mix a teaspoon of flour with a little water. First add the nutritional yeast and tahini to the pan and mix. Then pour in the water mixed with the flour, stir and simmer for 1-2 minutes. Add the spinach, cover with a lid and let it cook for 7-8 minutes on medium heat.

Finish it
Grate the Parmesan cheese. Add harissa on top of the bean mixture, sprinkle with parmesan cheese and serve! You can eat them alone with your favorite bread or serve with pasta or rice. Enjoy!
