I honestly found the classic recipe a bit bland and tasteless, so I added sun-dried tomatoes, spinach and also sun-dried tomato oil to take this dish to a whole other level!

125 grams sun-dried tomatoes in oil

Prepare the Ingredients
Start by preheating your oven to 210°C. In a large baking dish, combine cherry tomatoes, chopped sun-dried tomatoes, Boursin cheese, oil from the sun-dried tomatoes, dried oregano, dried basil, chilli flakes, and salt and pepper. Give everything a good stir to ensure it's well mixed.
Transfer the baking dish to the preheated oven and bake for approximately 20 minutes. The cheese will melt, the tomatoes will blister, and the spices will infuse into the mixture, creating a deeply flavorful base for your pasta.

Cook the Pasta
While the ingredients are baking in the oven, boil a large pot of salted water and cook 250 grams of your chosen pasta according to the package instructions until al dente. Remember to reserve some pasta water for later. Once the ingredients are baked, carefully remove the baking dish from the oven. Use a spoon to mash the tomatoes and Boursin cheese, mixing them into a deliciously creamy sauce.
While the mixture is still hot, add a generous handful of fresh spinach, stirring it in until it wilts from the residual heat. Drain your cooked pasta, then add it to the baking dish. Mix well, ensuring all the pasta is coated with the rich, creamy sauce. If the sauce is too thick, add a little bit of the reserved pasta water to loosen it up. Sprinkle some Parmesan cheese over the top of the pasta, then serve hot.

You can use any type of pasta you prefer. However, shapes that have crevices to hold onto the sauce like fusilli, farfalle, or penne are recommended.
The timing for cooking the pasta is crucial. Start boiling your water so that your pasta and the cheese-tomato mixture are ready at the same time. This ensures that the pasta is hot when added to the cheese-tomato mixture, allowing the Boursin cheese to coat the pasta more effectively.
When the cheese-tomato mixture is out of the oven, take the time to properly mash the tomatoes and cheese. This will create a smoother and creamier sauce.
