Gingerbread Biscotti are a real Italian delight. But you don’t have to worry about them and you can try them at home, they are really simple and suitable not only as a snack with coffee, but also as a christmas candy.

Prepare the dough
Biscotti are incredibly easy to make. In a bowl, first mix together the almond flour, baking powder, coconut sugar and gingerbread spice. Stir to combine well. Then add the eggs and coconut oil to form a dough.
Divide the dough into two parts and form two oval loaves on a baking sheet lined with baking paper.

Bake biscotti
Bake these loaves for about 20-25 minutes at 180°C until lightly golden.
At this point, spray the loaves lightly with water (ideally with a spray bottle) and cut them into slices about 1 cm thick. Place the slices back on the baking paper, leaving only small gaps between them. Turn the oven down to 160°C and bake the sliced biscotti for about 20-25 minutes until golden.
Decorate the finished biscotti with melted white chocolate, sprinkle with chopped pistachios and put in the fridge to cool for a while.
