Prepare the Chicken
Remove the meat from the rotisserie chicken, discarding the skin and bones. Shred or chop the chicken into bite-sized pieces and place them in a large mixing bowl. Peel and grate the carrot. Thinly slice or shred the cabbage and celery stalks. Add these vegetables to the bowl with the chicken.
Pour the sweet chili sauce over the chicken and vegetables. Season with salt and pepper according to your taste preferences. Gently toss all the ingredients together until the chicken and vegetables are evenly coated with the sweet chili sauce. Allow the salad to marinate for about 15-20 minutes in the refrigerator to enhance the flavors. Arrange lettuce leaves on serving plates or a large platter. Spoon the marinated chicken salad onto the lettuce leaves and enjoy!
