600 grams lean ground beef
1 medium onion
6 garlic cloves
handful of fresh parsley
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon coriander
1/2 teaspoon cinnamon
1/4 teaspoon cayenne pepper
1/2 teaspoon ground black pepper
1 teaspoon salt
4 flour tortillas
1 tablespoon olive oil

Prepare the Meat Mixture
In a large bowl, combine 600 grams of lean ground beef with a handful of chopped parsley, chopped onion, minced garlic, 1 teaspoon each of ground cumin, smoked paprika, coriander, 1/2 teaspoon of black pepper, 1/2 teaspoon of cinnamon, and 1 teaspoon of salt. Mix well until all the ingredients are evenly distributed.
Place a generous amount of the meat mixture on one half of each tortilla, spreading it evenly. Fold the other half over the meat to create a stuffed half-moon shape. Lightly brush both sides of the stuffed tortillas olive oil. This will help them achieve a nice golden brown color during air frying.

Cook the Arayes
Set your air fryer to 180°C and allow it to preheat. Place the stuffed tortillas into the air fryer basket in a single layer. You might need to cook them in batches depending on the size of your air fryer. Air fry for 10 minutes, flipping halfway through the cooking time, until the Arayes are golden brown and the meat is cooked through.
Remove the Arayes from the air fryer and serve hot. They are commonly enjoyed with dips like tahini or hummus, or simply with a side of fresh salad or yogurt.
