Prepare the Meat Mixture
In a large bowl, combine 600 grams of lean ground beef with a handful of chopped parsley, chopped onion, minced garlic, 1 teaspoon each of ground cumin, smoked paprika, coriander, 1/2 teaspoon of black pepper, 1/2 teaspoon of cinnamon, and 1 teaspoon of salt. Mix well until all the ingredients are evenly distributed.
Place a generous amount of the meat mixture on one half of each tortilla, spreading it evenly. Fold the other half over the meat to create a stuffed half-moon shape. Lightly brush both sides of the stuffed tortillas olive oil. This will help them achieve a nice golden brown color during air frying.
