Directions
1.
Combining Ingredients
In a large pot or pan, combine jumbo pasta shells, cherry tomatoes, canned chopped tomatoes, ricotta cheese, sun-dried tomato pesto, roughly torn basil (reserve a little for garnish), dried oregano, garlic powder, salt, and black pepper. Mix everything gently, ensuring that the ricotta cheese and pesto spread evenly among the shells.
Pour in the 250 ml of water, ensuring the pasta and ingredients are submerged. Stir gently to mix.

Final Additions
Place the pot or pan on medium-high heat. Bring the mixture to a simmer, then reduce the heat to medium-low. Cover with a lid and let it simmer for about 15 minutes. Stir occasionally to ensure that the pasta doesn't stick to the bottom and the ingredients cook evenly.
After the 15 minutes, scatter the chopped spinach over the top, followed by the mozzarella. Cover again and continue to cook for another 3-5 minutes, or just until the spinach has wilted and the mozzarella has melted. Once cooked, remove from heat. Garnish with the reserved fresh basil and enjoy!

Notes
Opt for medium-sized pasta shells to ensure even cooking and better sauce absorption.
If needed, add a splash of vegetable broth or water to maintain the desired consistency of your sauce.
Experiment with different cheeses – try a blend of mozzarella and parmesan for a delightful twist.
Include cooked chicken, shrimp, or sautéed mushrooms to add extra protein and texture to your dish.
Refrigerate any leftover One Pot Pasta Shells in an airtight container for up to 3 days. When reheating, add a splash of water or broth to maintain the creamy texture.
