Prep the Toppings
In a non-stick skillet over medium heat, warm the corn tortilla until it's slightly toasted, about 1-2 minutes per side. Once toasted to your liking, place it on a serving plate.
In the same skillet, turn the heat up to medium-high. Crumble the feta cheese directly into the skillet. As it begins to melt and turn golden at the edges, carefully crack the large egg right on top of the melting feta. Cook for 2-3 minutes until the whites are set but the yolk remains runny. If you prefer your yolk fully cooked, cover the skillet with a lid and let it cook for an additional 1-2 minutes.

Slide the crispy feta fried egg onto the toasted corn tortilla. Adorn with the sliced avocado and a handful of fresh arugula. Sprinkle a pinch of red chili flakes over the top for a touch of heat.

Notes
A non-stick skillet is crucial for this recipe to ensure that the egg and feta cheese do not stick to the pan.
Be gentle when cracking the egg over the feta to maintain a beautiful, runny yolk. If you accidentally break it, no worries! It will still be delicious.
If you're out of feta or simply want to try something different, crumbled goat cheese or even blue cheese can be a delightful alternative.
While corn tortilla gives a nice rustic flavor, you can also use whole wheat or even a spinach tortilla for a twist.
The crispy feta fried egg can be refrigerated for up to 1 day. However, for the best taste and texture, I highly recommend to consume it freshly cooked.
