To begin, spread a tablespoon of the pizza sauce across half of a flour tortilla. Over the sauce, scatter around 25 grams of the shredded cheese, following up with some slices of the red onion, mushrooms, and green pepper, and a few olives. Once the toppings are arranged, sprinkle another layer of cheese and dried basil before folding the bare half of the tortilla over to form a half-moon shape, pressing gently.
Place your assembled pizzadilla into a heated skillet over a medium heat, allowing it to crisp up and turn a golden brown on the bottom. This should take around 2-3 minutes. Then, with care, flip the pizzadilla to let the other side cook for another 2-3 minutes until it's just as brown and crispy. Repeat this process with your remaining tortillas and ingredients.
