4 tablespoons pizza sauce
200 grams shredded cheese *I prefer mozzarella cheese for these
1/2 red onion - thinly sliced
50 grams mushrooms - thinly sliced
1/2 green pepper - thinly sliced
handful of olives
2 teaspoons dried basil

To begin, spread a tablespoon of the pizza sauce across half of a flour tortilla. Over the sauce, scatter around 25 grams of the shredded cheese, following up with some slices of the red onion, mushrooms, and green pepper, and a few olives. Once the toppings are arranged, sprinkle another layer of cheese and dried basil before folding the bare half of the tortilla over to form a half-moon shape, pressing gently.
Place your assembled pizzadilla into a heated skillet over a medium heat, allowing it to crisp up and turn a golden brown on the bottom. This should take around 2-3 minutes. Then, with care, flip the pizzadilla to let the other side cook for another 2-3 minutes until it's just as brown and crispy. Repeat this process with your remaining tortillas and ingredients. Once all your pizzadillas are cooked and crispy, cut each into two or three equal pieces. Enjoy!
