The Perfect Egg Base
Start by whisking together the eggs, milk, salt, and pepper in a bowl until well combined. The milk will ensure your eggs are fluffy and light, the perfect contrast to our crispy tortilla.
Heat a non-stick pan over medium heat. Pour in your egg mixture, ensuring it spreads out evenly. As the eggs begin to set, sprinkle that shredded cheese across the surface. Lay your tortilla over the semi-set eggs, pressing gently to ensure they bond.

Once the eggs are fully set (this won’t take long!), confidently flip the pan to transition to the tortilla side. Allow it to toast slightly to achieve that golden, crispy finish. Lay the egg-tortilla flat on a cutting board or plate. Use a knife to make a cut from the bottom edge of the tortilla to the center.
Now divide the tortilla into four sections. In the first section, place avocado slices uniformly. Adjacent to that, position the tomato slices. Next, evenly spread the arugula and optionally drizzle with sriracha for added flavor. In the last section, neatly layer the slices of ham.
